Instructions

  1. Slice the courgettes thinly and cut the onions into strips.
  2. Soften in olive oil for 15 minutes until the liquid has evaporated.
  3. Drain well and mix with the beaten eggs.
  4. Set in the pan for 3–4 minutes per side, flipping once.
