Ingredients · for 2 servings
- 600 g waxy potatoes
4 eggs- 200 ml olive oil
1 tsp paprika powder- Coarse sea salt

Instructions
- Cut the potatoes into batons and fry in plenty of olive oil until golden and crisp.
- Drain on kitchen paper and season with salt.
- Fry the eggs in hot oil until the edges are crisp.
- Set the eggs on the potatoes, dust with paprika and break them up at the table with a fork.
