Instructions

  1. Cut the potatoes into batons and fry in plenty of olive oil until golden and crisp.
  2. Drain on kitchen paper and season with salt.
  3. Fry the eggs in hot oil until the edges are crisp.
  4. Set the eggs on the potatoes, dust with paprika and break them up at the table with a fork.
