- 6 eggs
- 300 g mixed mushrooms
3 garlic cloves
4 tbsp olive oil
Parsley
Salt
Pepper
Instructions
- Slice the mushrooms and fry vigorously with the garlic in olive oil.
- Lower the heat and add the beaten eggs.
- Stir gently and constantly until the egg has just set – keep it creamy.
- Season with parsley, salt and pepper and serve immediately.
