Instructions

  1. Cook the potatoes and onions in olive oil until soft.
  2. Separately soften the peppers, carrot and peas.
  3. Drain everything and fold into the beaten eggs.
  4. Set in the pan for 4 minutes per side, flipping once.
  5. Serve lukewarm in wedges.
