- 1 eggplant
- 2 peppers
- 4 tomatoes
- Thyme
- Olive oil
Instructions
- Cut the vegetables into slices or cubes.
- Sauté the onion and garlic in olive oil.
- Add the vegetables and braise gently with thyme for 35 min.
- Serve with baguette or as a side dish.
