Gratin de Courgettes

Ingredients · for 4 servings
1 kg zucchini
300 ml cream
2 eggs
2 garlic cloves
150 g grated Gruyère
30 g butter
Nutmeg
Thyme
Salt
Pepper
Instructions
- Slice the zucchini, salt it and let it draw water for 15 minutes.
- Fry in butter in batches for 5 minutes so it releases no more water.
- Whisk the cream with eggs, pressed garlic, nutmeg, salt and pepper.
- Layer the zucchini in a dish and pour the custard over it.
- Scatter with cheese and thyme and bake at 180 °C for 35 minutes until golden.
