Honey-Glazed Turnips

Baby turnips cooked down in butter, honey and a little stock until coated in a glossy glaze.

Instructions

  1. Peel the turnips and, depending on size, quarter them or cut into even wedges of about 3 cm so they cook evenly.
  2. Melt the butter in a wide pan over medium heat, stir in the honey and pinch of sugar, and toss the turnip pieces in it for 3–4 min. until coated all over.
  3. Pour in the vegetable stock, add the thyme sprig and season lightly with salt — the liquid should just barely cover the turnips.
  4. Cook covered over low heat for 15 min. until the turnips are tender but still have some bite.
  5. Remove the lid and let the liquid reduce uncovered for 6–8 min., swirling the pan several times, until only a syrupy glaze remains coating the turnips.
  6. Remove the thyme sprig, season with pepper, sprinkle with chopped chives, and serve hot with poultry or lamb.
