Patatas a lo Pobre
Poor man's potatoes: slowly braised in olive oil with peppers and onions.

Ingredients · for 4 servings
1 kg waxy potatoes
2 onions- 2 green bell peppers
4 garlic cloves- 200 ml olive oil
1 tsp sherry vinegar
Salt
Instructions
- Slice the potatoes thinly and cut the onions and peppers into strips.
- Braise everything together slowly in plenty of olive oil over medium heat – do not deep-fry.
- Turn carefully again and again until the potatoes are soft and lightly golden (about 30 minutes).
- Pour off the oil, season with vinegar and salt, and serve with a fried egg if you like.
