Poor man's potatoes: slowly braised in olive oil with peppers and onions.

Instructions

  1. Slice the potatoes thinly and cut the onions and peppers into strips.
  2. Braise everything together slowly in plenty of olive oil over medium heat – do not deep-fry.
  3. Turn carefully again and again until the potatoes are soft and lightly golden (about 30 minutes).
  4. Pour off the oil, season with vinegar and salt, and serve with a fried egg if you like.
