Instructions

  1. Clean the mushrooms and cut them into even pieces.
  2. Gently infuse the sliced garlic and chilli in the olive oil until pale golden.
  3. Fry the mushrooms over high heat until the liquid has evaporated.
  4. Deglaze with white wine, season with salt and scatter with plenty of parsley.
