Fava Bean Tajine
Fava beans cooked soft in olive oil with plenty of garlic, cumin and paprika, until almost falling apart.

Ingredients · for 4 servings
500 g dried fava beans (split, peeled)
6 cloves of garlic
1 onion
1 tsp cumin
1 tsp paprika powder
1/2 tsp chili flakes
6 tbsp olive oil
1 lemon
1 l water
Salt, pepper
1/2 bunch parsley
Instructions
- Soak the fava beans overnight in plenty of cold water, then drain and rinse thoroughly the next day.
- Bring the beans to a simmer with the water, the halved onion and three crushed cloves of garlic and cook gently for 40 min. until completely soft.
- Remove the onion halves and roughly mash the beans with a potato masher so a thick, still chunky mixture remains.
- Finely chop the remaining garlic and toast with cumin, paprika powder and chili flakes in 3 tbsp olive oil for 1 min. until the oil turns red.
- Stir the spiced oil into the beans, season with salt and pepper and simmer uncovered for 5 min. until the tajine falls thickly from the spoon.
- Drizzle with the remaining olive oil, the lemon juice and chopped parsley, and serve hot with flatbread.
