- 4 veal shank slices
- Root vegetables
- White wine
- Broth
- Gremolata (lemon, parsley, garlic)
- Saffron risotto
Instructions
- Coat the shank slices in flour and sear well.
- Add the vegetables, deglaze with white wine.
- Cover and braise gently for 2 hrs.
- Sprinkle with gremolata, serve over saffron risotto.
