Instructions

  1. Bone and fillet the anchovies and wash them thoroughly.
  2. Spread them in a shallow dish, sprinkle with salt and cover completely with vinegar.
  3. Marinate for 3 hours in the fridge until the flesh turns white.
  4. Pour off the vinegar, rinse the fillets and pat dry.
  5. Arrange with olive oil, chopped garlic and parsley.
