Ingredients · for 4 servings
800 g fresh anchovies
300 ml white wine vinegar
150 ml olive oil
4 garlic cloves
1 bunch parsley
2 tsp coarse salt
Pepper
Instructions
- Bone and fillet the anchovies and wash them thoroughly.
- Spread them in a shallow dish, sprinkle with salt and cover completely with vinegar.
- Marinate for 3 hours in the fridge until the flesh turns white.
- Pour off the vinegar, rinse the fillets and pat dry.
- Arrange with olive oil, chopped garlic and parsley.
