12 small red mullet
200 g durum wheat flour
Olive oil for frying
2 lemons
Coarse sea salt
Parsley
Instructions
- Gut and wash the fish and pat them very dry.
- Salt generously and coat in flour.
- Fry in hot olive oil for 3 minutes per side until crisp.
- Drain on kitchen paper.
- Serve immediately with lemon wedges and parsley.
