  1. Gut and wash the fish and pat them very dry.
  2. Salt generously and coat in flour.
  3. Fry in hot olive oil for 3 minutes per side until crisp.
  4. Drain on kitchen paper.
  5. Serve immediately with lemon wedges and parsley.
