800 g small squid
200 g durum wheat flour
Olive oil for frying
2 lemons
Coarse sea salt
Pepper
Parsley
Instructions
- Clean the squid, cut into rings and pat very dry.
- Coat in flour only – no batter, that is the Greek way.
- Shake off the excess flour.
- Fry in batches in hot olive oil for 2–3 minutes until golden.
- Season with salt and serve with lemon wedges and parsley.
