Instructions

  1. Clean the squid, cut into rings and pat very dry.
  2. Coat in flour only – no batter, that is the Greek way.
  3. Shake off the excess flour.
  4. Fry in batches in hot olive oil for 2–3 minutes until golden.
  5. Season with salt and serve with lemon wedges and parsley.
