Pan-Fried Zander Fillet
Zander fillet with crisp skin in brown butter with lemon.

Ingredients · for 4 servings
4 zander fillets with skin
3 tbsp flour
60 g butter
1 lemon
2 tbsp oil
Parsley
Salt
Pepper
Instructions
- Pat the zander fillets dry, season with salt and flour the skin side.
- Heat the oil and fry the fillets skin side down for 4 minutes until crisp.
- Turn, reduce the heat and finish cooking for 1 minute.
- Let the butter foam in the pan until it smells nutty.
- Deglaze with lemon juice, pour over the fish and serve with parsley.
