Instructions

  1. Pat the zander fillets dry, season with salt and flour the skin side.
  2. Heat the oil and fry the fillets skin side down for 4 minutes until crisp.
  3. Turn, reduce the heat and finish cooking for 1 minute.
  4. Let the butter foam in the pan until it smells nutty.
  5. Deglaze with lemon juice, pour over the fish and serve with parsley.
