Beer-Battered Fish with Remoulade

800 g cod fillet
200 g flour
250 ml pale beer
1 egg
1 tsp baking powder
Oil for deep-frying
250 g mayonnaise
2 pickled gherkins
1 tbsp capers
1 tsp mustard
Lemon wedges
Instructions
- Cut the fish into portions, season with salt and pat dry.
- Whisk the flour, baking powder, egg and beer into a smooth batter and rest for 15 minutes.
- For the remoulade, stir the mayonnaise together with finely chopped gherkins, capers and mustard.
- Draw the fish through the batter and deep-fry in hot oil for 5 minutes until golden brown.
- Serve with the remoulade and lemon wedges.
