Instructions

  1. Cut the fish into portions, season with salt and pat dry.
  2. Whisk the flour, baking powder, egg and beer into a smooth batter and rest for 15 minutes.
  3. For the remoulade, stir the mayonnaise together with finely chopped gherkins, capers and mustard.
  4. Draw the fish through the batter and deep-fry in hot oil for 5 minutes until golden brown.
  5. Serve with the remoulade and lemon wedges.
