Cozze alla Marinara

Ingredients · for 4 servings
2 kg mussels
400 g cherry tomatoes
4 garlic cloves
200 ml white wine
6 tbsp olive oil
1 tsp chilli flakes
1 bunch parsley
1 lemon
Pepper
White bread
Instructions
- Scrub the mussels thoroughly under cold water, remove the beards and discard any that are already open.
- Let the garlic and chilli release their aroma in olive oil without browning.
- Add the halved tomatoes and let them break down for 5 minutes.
- Add the mussels, pour in the white wine and steam covered over high heat for 6 minutes.
- Discard any mussels that have stayed closed.
- Season with parsley, pepper and lemon and serve with white bread.
