Ingredients · for 4 servings
400 g squid rings
300 g prawns
300 g small fish
200 g durum semolina
100 g flour
1 l frying oil
2 lemons
Parsley
Salt
Pepper
Instructions
- Wash the seafood and pat it very thoroughly dry, otherwise the oil will spatter.
- Mix the semolina and flour with salt and pepper.
- Toss everything in the mixture in batches and shake off any excess flour.
- Heat the oil to 180 °C and fry in small batches for 2–3 minutes until golden brown.
- Drain on kitchen paper, season with salt and serve immediately with lemon wedges and parsley.
