Instructions

  1. Wash the seafood and pat it very thoroughly dry, otherwise the oil will spatter.
  2. Mix the semolina and flour with salt and pepper.
  3. Toss everything in the mixture in batches and shake off any excess flour.
  4. Heat the oil to 180 °C and fry in small batches for 2–3 minutes until golden brown.
  5. Drain on kitchen paper, season with salt and serve immediately with lemon wedges and parsley.
