Ingredients · for 4 servings
2 sea bream (600 g each)
400 g cherry tomatoes
4 garlic cloves
200 ml white wine
300 ml water
80 ml olive oil
1 bunch of parsley
1 tsp chilli flakes
Oregano
Salt
Pepper
Instructions
- Gut and scale the sea bream, rinse them and salt the cavities.
- Gently fry garlic and chilli in olive oil in a wide pan until fragrant.
- Add the halved cherry tomatoes and cook for 5 minutes.
- Pour in white wine and water and bring to a boil.
- Slide in the fish and poach uncovered over medium heat for 15 minutes, basting repeatedly with the broth.
- Fillet the fish, spoon over the broth and serve with parsley and oregano.
