Ingredients · for 4 servings
400 g squid
400 g mussels
300 g prawns
200 g clams
3 lemons
1 bunch of parsley
3 garlic cloves
1 celery stalk
100 ml olive oil
1 bay leaf
Salt
Pepper
Instructions
- Clean the shellfish thoroughly and steam them in a pot with the bay leaf for 5 minutes until they open.
- Pick the meat from the shells and strain the cooking liquid through a fine sieve.
- Cook the squid in the liquid for 25 minutes until tender, adding the prawns for the last 3 minutes.
- Drain all the seafood and let it cool to lukewarm.
- Cut the squid into rings and mix with the remaining seafood and finely sliced celery.
- Whisk a marinade from lemon juice, olive oil, garlic, parsley, salt and pepper and fold it in.
- Chill for at least 2 hours to let the flavours develop.
