Ingredients · for 4 servings

Instructions

  1. Clean the shellfish thoroughly and steam them in a pot with the bay leaf for 5 minutes until they open.
  2. Pick the meat from the shells and strain the cooking liquid through a fine sieve.
  3. Cook the squid in the liquid for 25 minutes until tender, adding the prawns for the last 3 minutes.
  4. Drain all the seafood and let it cool to lukewarm.
  5. Cut the squid into rings and mix with the remaining seafood and finely sliced celery.
  6. Whisk a marinade from lemon juice, olive oil, garlic, parsley, salt and pepper and fold it in.
  7. Chill for at least 2 hours to let the flavours develop.
