Galician almond cake without flour – with the Cross of St James in icing sugar.

Ingredients · for 8 servings
- 250 g ground almonds
- 250 g sugar
4 eggs- Zest of 1 lemon
- 1 tsp cinnamon
- Icing sugar for dusting
Instructions
- Beat the eggs with the sugar until very foamy.
- Carefully fold in the almonds, lemon zest and cinnamon.
- Pour into a greased springform tin and bake at 180 °C for 35 minutes.
- Let it cool completely.
- Place a cross stencil on top and dust generously with icing sugar.
