Basque Cheesecake

Ingredients · for 8 servings
- 800 g cream cheese
- 250 g sugar
5 eggs- 300 ml cream
- 30 g flour
1 pinch of salt
Instructions
- Stir the cream cheese with the sugar and salt until smooth.
- Beat in the eggs one at a time, then the cream and the sifted flour.
- Line a springform tin with baking paper that overhangs the rim.
- Bake at 220 °C for 50 minutes until the surface is deep dark brown.
- Let it cool completely – the centre may wobble and stays creamy.
