Moist walnut cake with cinnamon and syrup – a Christmas classic.

Ingredients · for 12 servings
300 g walnuts
200 g rusks or breadcrumbs
6 eggs
200 g sugar
200 ml oil
2 tsp cinnamon
1 tsp ground cloves
1 sachet baking powder
400 g sugar for the syrup
400 ml water
1 lemon
Instructions
- Coarsely grind the walnuts and mix with the crumbs, cinnamon, cloves and baking powder.
- Beat the eggs with the sugar until very fluffy, then drizzle in the oil.
- Fold in the nut mixture and pour into a greased tin.
- Bake at 180 °C for 40 minutes and leave to cool.
- Boil a syrup from sugar, water and lemon and pour it hot over the cold cake.
