Instructions

  1. Wash the peppers and pat them thoroughly dry.
  2. Heat the olive oil in a pan until very hot.
  3. Fry the peppers for 4–5 minutes, tossing, until the skins blister and collapse.
  4. Drain on kitchen paper, sprinkle generously with coarse salt and serve at once.
