Instructions

  1. Cut the potatoes into coarse cubes, soak in cold water, then dry them well.
  2. Fry twice: first at 140 °C until tender, then at 190 °C until crisp and golden.
  3. For the sauce, sweat the garlic in oil, then stir in the flour and both paprikas.
  4. Add tomatoes and vinegar, simmer for 10 minutes and blend until smooth.
  5. Salt the potatoes, coat with the sauce and serve immediately.
