Ingredients · for 4 servings
1 kg waxy potatoes- Olive oil for frying
- 400 g strained tomatoes
- 1 tbsp sweet paprika
- 1 tsp hot paprika
1 tbsp flour
1 tsp sherry vinegar
2 garlic cloves

Instructions
- Cut the potatoes into coarse cubes, soak in cold water, then dry them well.
- Fry twice: first at 140 °C until tender, then at 190 °C until crisp and golden.
- For the sauce, sweat the garlic in oil, then stir in the flour and both paprikas.
- Add tomatoes and vinegar, simmer for 10 minutes and blend until smooth.
- Salt the potatoes, coat with the sauce and serve immediately.
