Aloo Gobi
Golden-fried cauliflower with potatoes, turmeric and ginger – dry-fried, full of roasted flavor.

Ingredients · for 4 servings
1 cauliflower
400 g potatoes
1 onion
2 tomatoes
1 piece ginger (3 cm)
1 green chili
1 tsp cumin seeds
1 tsp turmeric
1 tsp ground coriander seeds
1/2 tsp garam masala
4 tbsp oil
Salt
1/2 bunch coriander
Instructions
- Break the cauliflower into small florets, peel and dice the potatoes.
- Fry the potatoes in the hot oil for 5 min, add the cauliflower and roast for another 5 min until both have color; remove.
- Let the cumin seeds crackle in the remaining oil, fry the onion until golden yellow.
- Stir in the grated ginger, chili, turmeric and coriander, and braise the diced tomatoes with them for 3 min.
- Return the vegetables to the pan, season with salt and cook, covered, over low heat for 12–15 min – only swirl, don't stir, or it will fall apart.
- Finish with garam masala and coriander – serve with rice, naan or as a side.
