Champignons à la Grecque
Mushrooms marinated in a white wine and coriander broth – served cold as a starter.

Ingredients · for 4 servings
800 g small mushrooms
200 ml white wine
100 ml olive oil
2 lemons
1 tbsp coriander seeds
2 bay leaves
1 sprig thyme
2 tomatoes
Salt
Pepper
Instructions
- Clean the mushrooms and trim the stalks.
- Bring the white wine, olive oil, lemon juice, coriander, bay and thyme to the boil.
- Add the mushrooms and simmer gently for 8 minutes.
- Add the diced tomatoes and take off the heat.
- Let cool completely in the broth and serve cold.
