Instructions

  1. Clean the mushrooms and trim the stalks.
  2. Bring the white wine, olive oil, lemon juice, coriander, bay and thyme to the boil.
  3. Add the mushrooms and simmer gently for 8 minutes.
  4. Add the diced tomatoes and take off the heat.
  5. Let cool completely in the broth and serve cold.
