  1. Finely dice the tomatoes, salt them and let them drain for 15 minutes.
  2. Mix with the finely chopped onion and the herbs.
  3. Stir in the flour and baking powder until a thick batter forms.
  4. Drop small portions into the hot oil using two spoons.
  5. Fry for 3 minutes per side until golden brown and drain.
