Ingredients · for 4 servings
800 g very ripe tomatoes
1 onion
200 g flour
1 bunch mint
1 bunch parsley
1 tsp baking powder
Olive oil for frying
Salt
Pepper
Instructions
- Finely dice the tomatoes, salt them and let them drain for 15 minutes.
- Mix with the finely chopped onion and the herbs.
- Stir in the flour and baking powder until a thick batter forms.
- Drop small portions into the hot oil using two spoons.
- Fry for 3 minutes per side until golden brown and drain.
