Fried zucchini fritters with feta and mint – a crispy meze.

Ingredients · for 4 servings
800 g zucchini
200 g feta
1 onion
2 eggs
150 g breadcrumbs
1 bunch mint
1 bunch dill
Flour for coating
Olive oil for frying
Salt
Pepper
Instructions
- Coarsely grate the zucchini, salt it and let it draw water for 20 minutes.
- Squeeze it out firmly – the mixture must be as dry as possible.
- Knead together with the crumbled feta, onion, eggs, breadcrumbs and herbs.
- Shape small fritters and turn them in flour.
- Fry in hot olive oil for 3 minutes per side until golden brown.
