Instructions

  1. Coarsely grate the zucchini, salt it and let it draw water for 20 minutes.
  2. Squeeze it out firmly – the mixture must be as dry as possible.
  3. Knead together with the crumbled feta, onion, eggs, breadcrumbs and herbs.
  4. Shape small fritters and turn them in flour.
  5. Fry in hot olive oil for 3 minutes per side until golden brown.
