Ingredients · for 4 servings
2 courgettes
1 aubergine
4 tomatoes
2 onions
4 garlic cloves
80 ml olive oil
2 sprigs thyme
1 tsp herbes de Provence
Oregano
Salt
Pepper
Instructions
- Slice the onions into rings and sweat them in olive oil for 10 minutes until soft; they form the bed.
- Spread the onions in a shallow baking dish and scatter the garlic over them.
- Cut the courgettes, aubergine and tomatoes into even 4 mm slices.
- Layer the slices alternately, upright and tightly packed, into the dish.
- Drizzle with olive oil, season with salt and pepper and sprinkle with thyme and herbs.
- Bake covered at 180 °C for 40 minutes, then uncovered for another 20 minutes to brown.
