Ingredients · for 4 servings

Instructions

  1. Slice the onions into rings and sweat them in olive oil for 10 minutes until soft; they form the bed.
  2. Spread the onions in a shallow baking dish and scatter the garlic over them.
  3. Cut the courgettes, aubergine and tomatoes into even 4 mm slices.
  4. Layer the slices alternately, upright and tightly packed, into the dish.
  5. Drizzle with olive oil, season with salt and pepper and sprinkle with thyme and herbs.
  6. Bake covered at 180 °C for 40 minutes, then uncovered for another 20 minutes to brown.
