Ingredients · for 4 servings
- 800 g squid tubes
- 200 g flour
- 250 ml sparkling water (ice cold)
- 1 tsp baking powder
1 pinch of salt- Olive oil for frying
- Lemon wedges
Instructions
- Cut the squid into rings 1 cm wide and pat them dry.
- Whisk the flour, baking powder, salt and ice-cold sparkling water into a smooth batter.
- Pull the rings through the batter and deep-fry them in hot oil for 2–3 minutes until golden brown.
- Drain on kitchen paper, salt and serve with lemon.
