Instructions

  1. Cut the squid into rings 1 cm wide and pat them dry.
  2. Whisk the flour, baking powder, salt and ice-cold sparkling water into a smooth batter.
  3. Pull the rings through the batter and deep-fry them in hot oil for 2–3 minutes until golden brown.
  4. Drain on kitchen paper, salt and serve with lemon.
