Hearty fried potato pan with egg, pepper and spring onions – vegetarian.

Ingredients · for 2 servings
600 g day-old boiled potatoes
6 eggs
1 red pepper
2 spring onions
1 onion
100 ml milk
3 tbsp oil
Parsley
Salt
Pepper
Instructions
- Slice the potatoes and fry them in oil until golden brown and crisp.
- Add the onion and pepper and fry for another 5 minutes.
- Whisk the eggs with the milk, salt and pepper and pour into the pan.
- Let it set over gentle heat, turning it over carefully once.
- Sprinkle with spring onion rings and parsley.
