Instructions

  1. Slice the potatoes and fry them in oil until golden brown and crisp.
  2. Add the onion and pepper and fry for another 5 minutes.
  3. Whisk the eggs with the milk, salt and pepper and pour into the pan.
  4. Let it set over gentle heat, turning it over carefully once.
  5. Sprinkle with spring onion rings and parsley.
