  1. Whisk the eggs only loosely with the cream, salt and pepper – do not beat them frothy.
  2. Melt the butter in the pan over gentle heat.
  3. Add the egg mixture and push it slowly from the edge to the centre with a spatula.
  4. Take off the heat while the mixture is still glossy and creamy.
  5. Sprinkle with chopped chives and serve immediately.
