6 eggs
3 tbsp cream
30 g butter
1 bunch chives
Salt
Pepper
Instructions
- Whisk the eggs only loosely with the cream, salt and pepper – do not beat them frothy.
- Melt the butter in the pan over gentle heat.
- Add the egg mixture and push it slowly from the edge to the centre with a spatula.
- Take off the heat while the mixture is still glossy and creamy.
- Sprinkle with chopped chives and serve immediately.
