Instructions

  1. Whisk the egg yolks, sugar, salt and vanilla seeds in a metal bowl.
  2. Set the bowl over a water bath – the water must not boil.
  3. Stir in the Marsala and whisk without stopping.
  4. After 8–10 minutes the cream is thick, warm and foamy – it must never curdle.
  5. Pour into glasses immediately and serve with ladyfingers and berries.
