Ingredients · for 4 servings
6 egg yolks
90 g sugar
120 ml Marsala
1 pinch salt
1 vanilla pod
Ladyfingers

Instructions
- Whisk the egg yolks, sugar, salt and vanilla seeds in a metal bowl.
- Set the bowl over a water bath – the water must not boil.
- Stir in the Marsala and whisk without stopping.
- After 8–10 minutes the cream is thick, warm and foamy – it must never curdle.
- Pour into glasses immediately and serve with ladyfingers and berries.
