Instructions

  1. Melt the butter and let it cool slightly.
  2. Beat the eggs with sugar and honey until fluffy.
  3. Fold in flour, baking powder, salt and lemon zest, then stir in the butter.
  4. Chill the batter for at least 2 hours – this creates the typical hump.
  5. Fill a madeleine tin and bake at 210 °C for 10 minutes.
