Ingredients · for 24 servings
150 g flour
150 g sugar
150 g butter
3 eggs
1 lemon (zest)
1 tsp baking powder
1 pinch of salt
1 tbsp honey
Instructions
- Melt the butter and let it cool slightly.
- Beat the eggs with sugar and honey until fluffy.
- Fold in flour, baking powder, salt and lemon zest, then stir in the butter.
- Chill the batter for at least 2 hours – this creates the typical hump.
- Fill a madeleine tin and bake at 210 °C for 10 minutes.
