Zwetschgendatschi (Bavarian Plum Sheet Cake)

Ingredients · for 12 servings
400 g flour
1 sachet dry yeast
200 ml lukewarm milk
60 g sugar
80 g soft butter
1 egg
1.5 kg plums
150 g flour for the crumble
100 g sugar for the crumble
100 g cold butter

Instructions
- Knead a yeast dough from the flour, yeast, milk, sugar, butter and egg and let it rise for 1 hour.
- Stone the plums and score them so they fan out.
- Roll the dough out onto a baking sheet and lay the plums densely like roof tiles.
- For the crumble, knead the flour, sugar and cold butter into crumbs and scatter them over the top.
- Bake at 180 °C for 40 minutes and sprinkle with cinnamon sugar while still warm.
