Ingredients · for 6 servings
300 g couscous
400 ml warm water
4 tomatoes
1 cucumber
1 red onion
2 lemons
6 tbsp olive oil
1 bunch mint
1 bunch parsley
Salt
Pepper
Instructions
- Pour the warm water over the couscous, let it swell for 10 minutes, then fluff it with a fork.
- Dice the tomatoes, cucumber and onion finely.
- Chop the herbs finely.
- Combine everything with lemon juice and olive oil and season generously.
- Chill for at least 2 hours so the flavours mingle.
