Instructions

  1. Blanch the beans in salted water for 8 minutes and refresh in cold water.
  2. Toast the walnuts in a dry pan.
  3. Slice the duck breast thinly.
  4. Whisk the oils, vinegar, mustard, salt and pepper into a vinaigrette.
  5. Arrange lettuce, beans, tomatoes and duck slices, then finish with the vinaigrette and nuts.
