Salade Landaise
A salad from the southwest with duck breast, green beans and walnuts.

Ingredients · for 4 servings
2 smoked duck breasts
200 g green beans
1 head of lettuce
150 g cherry tomatoes
80 g walnuts
3 tbsp walnut oil
3 tbsp olive oil
2 tbsp sherry vinegar
1 tsp Dijon mustard
Salt
Pepper
Instructions
- Blanch the beans in salted water for 8 minutes and refresh in cold water.
- Toast the walnuts in a dry pan.
- Slice the duck breast thinly.
- Whisk the oils, vinegar, mustard, salt and pepper into a vinaigrette.
- Arrange lettuce, beans, tomatoes and duck slices, then finish with the vinaigrette and nuts.
