Soupe au Pistou
Provençal vegetable soup with basil paste and white beans.

Ingredients · for 6 servings
300 g white beans
200 g green beans
2 courgettes
3 carrots
2 potatoes
2 tomatoes
150 g small pasta
2 bunches of basil
4 cloves of garlic
100 g Parmesan
150 ml olive oil
Salt
Pepper
Instructions
- Simmer the white beans for 40 minutes until tender.
- Dice the remaining vegetables, add them and cook for 20 minutes.
- Add the pasta and cook until al dente.
- For the pistou, crush the basil, garlic, Parmesan and olive oil into a paste in a mortar.
- Ladle the soup into bowls and stir a spoonful of pistou into each one, do not boil it.
