Instructions

  1. Simmer the white beans for 40 minutes until tender.
  2. Dice the remaining vegetables, add them and cook for 20 minutes.
  3. Add the pasta and cook until al dente.
  4. For the pistou, crush the basil, garlic, Parmesan and olive oil into a paste in a mortar.
  5. Ladle the soup into bowls and stir a spoonful of pistou into each one, do not boil it.
