Instructions

  1. Set aside a third of the mushrooms and slice the rest.
  2. Sweat the shallots in butter, add the mushrooms and fry until the liquid has evaporated.
  3. Stir in the flour, deglaze with the stock and simmer for 15 minutes.
  4. Blend finely and stir in the cream.
  5. Fry the remaining mushrooms separately, add them as a garnish and serve with thyme.
