Crème de Champignons
Creamy mushroom soup with shallots, cream and thyme.

Ingredients · for 4 servings
600 g button mushrooms
2 shallots
1 clove of garlic
40 g butter
1 tbsp flour
700 ml vegetable stock
200 ml cream
1 sprig of thyme
Parsley
Salt
Pepper
Instructions
- Set aside a third of the mushrooms and slice the rest.
- Sweat the shallots in butter, add the mushrooms and fry until the liquid has evaporated.
- Stir in the flour, deglaze with the stock and simmer for 15 minutes.
- Blend finely and stir in the cream.
- Fry the remaining mushrooms separately, add them as a garnish and serve with thyme.
