Swabian Potato Salad
Warm potato salad with broth, vinegar and oil – no bacon.

Ingredients · for 4 servings
- 1 kg waxy potatoes
- 250 ml broth
- 4 tbsp vinegar
- 4 tbsp oil
- 1 onion
- Chives
Instructions
- Boil the potatoes in their skins, slice while still warm.
- Pour hot broth with vinegar and diced onion over the top.
- Let sit for 30 min.
- Fold in the oil, serve with chives – the salad should be nicely soft and moist.
