White Cabbage Salad

Ingredients · for 6 servings
1 small white cabbage (approx. 1 kg)
1 onion
1 carrot
4 tbsp white wine vinegar
5 tbsp oil
1 tsp caraway seeds
2 tsp sugar
2 tsp salt
Pepper
Instructions
- Shred the cabbage very finely and knead it thoroughly with the salt and sugar.
- Let it stand for 20 minutes so the cabbage softens and releases its juice.
- Finely dice the onion, grate the carrot and add both.
- Season with the vinegar, oil, caraway and pepper.
- Let it marinate for at least 1 hour.
