Thin beef rolls with a Parmesan and herb filling, braised in tomato sauce.

Instructions

  1. Pound the meat slices thin between cling film, then season with salt and pepper.
  2. Mix the Parmesan, breadcrumbs, garlic, parsley and olive oil into a filling.
  3. Spread the filling over the slices, fold in the sides and roll them up, fixing each with a toothpick.
  4. Brown the rolls all over in olive oil and take them out.
  5. Sweat the onion in the drippings, deglaze with red wine and add the tomatoes.
  6. Return the rolls and braise covered over low heat for 50 minutes.
  7. Remove the toothpicks and serve with basil.
