Involtini di Manzo
Thin beef rolls with a Parmesan and herb filling, braised in tomato sauce.

Ingredients · for 4 servings
8 thin beef escalopes
100 g Parmesan
80 g breadcrumbs
2 garlic cloves
1 bunch parsley
1 bunch basil
800 g passata
1 onion
150 ml red wine
5 tbsp olive oil
Salt
Pepper
Instructions
- Pound the meat slices thin between cling film, then season with salt and pepper.
- Mix the Parmesan, breadcrumbs, garlic, parsley and olive oil into a filling.
- Spread the filling over the slices, fold in the sides and roll them up, fixing each with a toothpick.
- Brown the rolls all over in olive oil and take them out.
- Sweat the onion in the drippings, deglaze with red wine and add the tomatoes.
- Return the rolls and braise covered over low heat for 50 minutes.
- Remove the toothpicks and serve with basil.
