Ingredients · for 4 servings
- 1 kg beef cheeks
2 onions
2 carrots
1 leek
4 garlic cloves
500 ml red wine- 300 ml beef stock
1 tbsp tomato paste
2 bay leaves
Olive oil
Instructions
- Season the cheeks with salt and sear hard, then remove.
- Roast the vegetables, add the tomato paste and deglaze with red wine.
- Return the meat and add the stock and bay leaves.
- Braise gently covered for 2.5 hours until butter-tender.
- Strain the sauce and reduce until glossy.
