Instructions

  1. Season the cheeks with salt and sear hard, then remove.
  2. Roast the vegetables, add the tomato paste and deglaze with red wine.
  3. Return the meat and add the stock and bay leaves.
  4. Braise gently covered for 2.5 hours until butter-tender.
  5. Strain the sauce and reduce until glossy.
