Colourful cold rice salad with pickled vegetables, tuna and egg – a summer classic.

Ingredients · for 4 servings
300 g short-grain rice
200 g tuna in oil
3 eggs
150 g pickled mixed vegetables
100 g green olives
150 g mozzarella
2 tbsp capers
5 tbsp olive oil
1 lemon
Basil
Salt
Pepper
Instructions
- Cook the rice in salted water until al dente, rinse under cold water and drain well.
- Hard-boil the eggs for 9 minutes, cool, peel and dice them.
- Chop the vegetables, olives, mozzarella and tuna into small pieces.
- Mix everything with the rice and fold in the capers.
- Season with olive oil, lemon juice, salt and pepper.
- Chill for at least 1 hour and serve with basil.
