Ingredients · for 6 servings
1 stewing chicken (approx. 1.5 kg)
3 carrots
1 leek
1/2 celeriac
1 onion
2 bay leaves
5 peppercorns
200 g soup noodles
Parsley
Salt
Instructions
- Cover the chicken with cold water, bring to a boil and skim off the foam.
- Add half an onion, the bay leaves and peppercorns, then simmer gently for 60 minutes.
- Lift out the chicken, pull the meat off the bones and tear it into pieces.
- Strain the broth, add the finely chopped vegetables and cook for 15 minutes.
- Cook the noodles separately, add them to the soup with the meat and serve with parsley.
