Instructions

  1. Cover the chicken with cold water, bring to a boil and skim off the foam.
  2. Add half an onion, the bay leaves and peppercorns, then simmer gently for 60 minutes.
  3. Lift out the chicken, pull the meat off the bones and tear it into pieces.
  4. Strain the broth, add the finely chopped vegetables and cook for 15 minutes.
  5. Cook the noodles separately, add them to the soup with the meat and serve with parsley.
