Flädle Soup (Pancake Strip Soup)

Ingredients · for 4 servings
1.2 l strong vegetable stock
150 g flour
300 ml milk
3 eggs
1 pinch of salt
Butter for frying
Nutmeg
Chives
Instructions
- Whisk the flour, milk, eggs, salt and nutmeg into a smooth batter and rest for 20 minutes.
- Fry thin pancakes in butter and let them cool.
- Roll up the pancakes and cut them into fine strips.
- Heat the broth and season it.
- Put the pancake strips into the bowls, pour over the hot broth and sprinkle with chives.
