Lamb's Lettuce with Pumpkin Seed Oil

Instructions

  1. Wash the lamb's lettuce thoroughly and spin it dry, otherwise the dressing will not cling.
  2. Toast the pumpkin seeds in a dry pan without fat until they smell fragrant and crackle.
  3. Dice the shallot very finely.
  4. Stir a marinade from vinegar, mustard, honey, shallot, salt and pepper, then whisk in the pumpkin seed oil.
  5. Cut the apple into fine wedges.
  6. Toss the salad with the dressing only just before serving and arrange it with apple and seeds.
