Lamb's Lettuce with Pumpkin Seed Oil

Ingredients · for 4 servings
200 g lamb's lettuce
1 apple
60 g pumpkin seeds
4 tbsp pumpkin seed oil
2 tbsp apple cider vinegar
1 tsp mustard
1 tsp honey
1 shallot
Salt
Pepper
Instructions
- Wash the lamb's lettuce thoroughly and spin it dry, otherwise the dressing will not cling.
- Toast the pumpkin seeds in a dry pan without fat until they smell fragrant and crackle.
- Dice the shallot very finely.
- Stir a marinade from vinegar, mustard, honey, shallot, salt and pepper, then whisk in the pumpkin seed oil.
- Cut the apple into fine wedges.
- Toss the salad with the dressing only just before serving and arrange it with apple and seeds.
