Instructions

  1. Cook the farro in salted water for 25 minutes until al dente, rinse it cold and drain it well.
  2. Halve the cherry tomatoes, dice the cucumber and mozzarella and slice the onion into fine rings.
  3. Combine everything with the cooled farro.
  4. Whisk a marinade from olive oil, vinegar, salt and pepper and fold it in.
  5. Fold in the olives and basil.
  6. Chill for at least 30 minutes so the flavours develop.
