Insalata di Farro
Cold farro salad with cherry tomatoes, mozzarella, olives and basil.

Ingredients · for 4 servings
300 g farro (spelt)
300 g cherry tomatoes
200 g mozzarella
100 g black olives
1 cucumber
1 red onion
1 bunch basil
6 tbsp olive oil
2 tbsp red wine vinegar
Salt
Pepper
Instructions
- Cook the farro in salted water for 25 minutes until al dente, rinse it cold and drain it well.
- Halve the cherry tomatoes, dice the cucumber and mozzarella and slice the onion into fine rings.
- Combine everything with the cooled farro.
- Whisk a marinade from olive oil, vinegar, salt and pepper and fold it in.
- Fold in the olives and basil.
- Chill for at least 30 minutes so the flavours develop.
