Ingredients · for 2 servings
- 1 sea bream (approx. 800 g)
2 kg coarse sea salt
2 egg whites- 1 lemon
- 2 sprigs of thyme
Olive oil
Instructions
- Mix the salt with the egg whites and a little water to the texture of damp sand.
- Fill the fish with lemon slices and thyme.
- Place it on a bed of salt and cover it completely with the remaining salt.
- Bake at 200 °C for 30 minutes and let it rest for 5 minutes.
- Break open the crust, fillet the fish and serve with good olive oil.
