Instructions

  1. Mix the salt with the egg whites and a little water to the texture of damp sand.
  2. Fill the fish with lemon slices and thyme.
  3. Place it on a bed of salt and cover it completely with the remaining salt.
  4. Bake at 200 °C for 30 minutes and let it rest for 5 minutes.
  5. Break open the crust, fillet the fish and serve with good olive oil.
